Back to normal

That’s one of the things that I enjoy about January…we get back to normal. Sure, we have our crazy schedule of basketball practices & basketball games…and now we throw indoor soccer (Austin) into the mix. But that’s what our normal is.

Normal is also healthier eating. At least conscious eating. Rob & I are back to the Weight Watchers routine for awhile. Stocked up on all sorts of fresh produce at the grocery store today. Which reminds me…can someone explain why it’s so darn expensive to eat healthy?? I swear, I spent almost double what I would have if I was just buying processed/frozen/premade crap. But it’s worth it, right?

I’m writing about schedules & groceries simply because I have a lot on my mind tonight, but just can’t quite find the words to express it. This is the week. Wednesday is the day. The anniversary of my accident. Seven years. I’m okay….but it still holds a lot of emotion. I’ll be a bundle of nerves until I get past it. Until I drive that drive & make it to work. And then I’ll breath a sigh of relief…

and everything will be back to normal once again.

    Oh Katrina… I don’t know about your accident! But you will have a lot of us Peas there with you on that drive. :o) Smiles to you and to healthy eating!!

    I think that it’s so expensive to eat right because it’s a conspiracy with the food producers (i.e. Nabisco) and the fast food industry to keep us eating processed, cheap, high fat food. Oh, and the medical industry might be colluding with them because fat people (no offense) have more medical expenses related to their diet. But, you know I’m a huge conspiracy nut. Kudos to you for eating right. It’s definitely worth a longer life.

    So I managed to stay OP yesterday for the first time since Halloween (I think). Of course, it was also the first day I had tried to be OP so yay me. And yay to both of you for starting again. In the spirit of the New Year, I’m sharing one of my favorite recipes. It started out as a WW recipe from their 5 ingredient 15 minute cookbook (their best one in my opinion) but was a little too bland for me so I spiced it up. The only food thing I remember about you is not eating sour cream so I hope you like:
    Mediterranean Pasta with Zucchini
    8 oz. penne or ziti
    2 14.5 oz. cans diced tomatoes with basil, garlic, oregano
    15 oz. can chickpeas, drained
    2 zucchini, sliced
    2.25 oz. can sliced black olives
    6 oz. jar mild pepper rings
    1. Cook pasta w/o added salt or fat
    2. While pasta cooks, combine all other ingredients in a large skillet (and I mean large!) and bring to a boil. Reduce heat and simmer, uncovered, 5 minutes.
    3. Spoon tomato mixture over drained pasta.
    6 servings at 5 points each, 1.5 cups per serving
    Living alone, I tend to eat a lot of leftovers. And while this makes a lot, I can actually eat it 6 times without dreading it.
