weekly eats.

I was kind of tired of "meal plan monday." on the menu this week…

Sunday – coconut crusted haddock, eggplant fries*, arugula & mozzarella salad. *note…the eggplant fries were DELICIOUS. I subbed grapeseed oil for olive oil b/c it has a higher smoke point (in other words, it can withstand hotter cooking temps)…and b/c I just like the taste of grapeseed oil.

MondayKale & White Bean Soup, Mazza's cheese bread, with Raspberry Chocolate Mint Pie Jars for dessert (more on those soon!)

Tuesday – football night – Black Bean Nachos 

Wednesday – breakfast for dinner – eggs, homefries, and toast (maybe some veggie sausage thrown in)

Thursday – Ricotta & Spinach stuffed shells 

Friday & Saturday – leftoevers, fend-for-yourself style. I've really given up on planning early weekend meals – no way to predict who will be home!
