foodie friday : links
I have spent precious little time in my kitchen lately. A combo of travel & lack of motivation, really. When I'm home from NYC, I'll have a 3 day weekend…sans travel. I had been thinking of heading down to Boston for the holiday, but decided that staying home sounds much better. So, today's foodie friday is all about food that I hope to cook soon (if not this weekend, definitely in the next couple of weeks)….
a fruit tart of some sort (recipes welcomed!)
Chocolate Honey Cake (I really adore honey. I'd likely make this into cupcakes.)
something with kale
what are you cooking these days?

I haven’t been cooking much at all lately. The eating out is one of the things about my life that is feeling very out of control.
I need to work on an Easter menu.

So that Carrot Cake Cookie recipe is the one that I told you about one day and forgot to give you the recipe for. I have made it and LOVED it. My sis won a contest with a tweeked version of it. I’ve been craving carrot cake lately….instead I am cooking the traditional Easter menu this weekend complete with the ham which i won’t eat…bummer!

Okay. In my mind, “traditional Easter menu” screams carrot cake. What is your dessert?

i have been horrible about cooking lately. unemployment (which means a VERRRRRRY tight food budget) plus not having anyone to cook with/for anymore made me abandon the kitchen. i’m having a hard time getting back in there.

not sure about colleen, but part of our “traditional easter menu” means the dessert is lemon pie.
this is a good one i’ve made before: http://www.kraftrecipes.com/recipes/triple-layer-lemon-pie-73956.aspx
and my mom makes a sour cream lemon pie that is yummy too. i should copy the recipe down when i’m over there tomorrow.

Barb-
My family has unfortnately never had Carrot Cake for Easter…we always had cake with either pineapple or coconut. In the last 10 years we’ve moved to pies, this year was raspberry. I wish they would do carrot cake but out of 5 adults and 3 kids there are only 3 who eat it. Maybe I’ll try your family recipe and gift half to someone local…any ideas who might eat it?

carrot cake cookies sound like a must for me.
i’ve been back in the kitchen for the past week and happy about it– but it is my house with two picky kids and one picky mike, so i have nothing of much interest to share.
xoxo.
