foodie friday (let’s link!)

Okay, so there's nothing like jumping right in. I realize that this is super quick – so if you don't join in this week, please do next week! A few intro comments - 

*posts from any day of the week are totally fine! there will be no foodie friday police showing up to take your apron away if you save up your sunday dinner pics. 

*you totally get points in my book if you link up the "we had cereal for dinner" real-ness. Lord knows you're gonna see some grilled cheese from me. 

*bonus points for wine. 

*link up recipes or cookbook references, pretty please. I am sooo glad that there are excellent cooks on the internets. Keeps me (slightly) fat & happy.

Recipes

Leek & Spinach Frittata from Sprouted Kitchen and Skillet Smashed Potatoes from 101 Cookbooks. 

Eggspotatoes

I am a huge fan of eggs for dinner. Also a huge fan of home fries. So, these two recipes jazzed up a few basic ingredients. I somehow managed to NOT take a pic of the Smashed Potatoes while they were cooking – probably b/c I was busy swearing when I smashed some of them right out of the pan. Tip: do not take the frustrations of the day out on the potatoes. These potatoes were really yummy. I used a combination of red & new potatoes, and was very generous with the olive oil. My favorite part was the crispy bits of potato skins! 

Frittatapan

I absolutely LOVED this frittata. I made a few minor changes to the recipe – I subbed fresh baby spinach for the steamed spinach. I don't like the idea of having to squeeze spinach. Twice. The baby spinach cooked just fine, and wasn't slimy AT ALL (hi Angie!). I also eliminated the tomatoes, b/c ick. I added slices of avocado after cooking. Oh, and I used a wicked sharp cheddar b/c it was what I had handy. I think that feta or swiss would work equally well. My only "complaint"? The frittata was very thin – I don't know if that's b/c I used a pan that was too big, or b/c I didn't whisk enough air into the eggs, or simply b/c I should have used more eggs for a thicker frittata. All in all, this one is a keeper!

Reisling

I cooked this meal on Thursday, which is my wine & skype with Barb night, so I opened a bottle from our current wine list. I rarely drink white wine anymore, so this was a departure. Very sweet, but enjoyable!

Sadly, the photo of the finished meal really blows. I was dying to EAT, so I was in a hurry, and didn't put much effort into it. Really could have thrown together a quick spinach salad for nutritional and photographic purposes!
