40@40 – my heart beets for you.

#2 On my 40@40 list - rediscover 5 "new" veggies. 

I'm going skp over the first veggie on this list – brussel sprouts. I roasted them. I ate them. I didn't love them. I'll make them again – particularly when they show up in my CSA box. 

I also had sunchoke recently – mixed into a scallop entree. I honestly don't recall anything exciting about them. I'll have to buy & prepare them myself to really get a flavor (ha!). 

That brings me to the third veggie that I get to count toward this goal: beets. I don't recall ever having beets as a child (Mom, correct me?). I think that I often associated them with canned cranberry sauce b/c of the color – not a pleasant link in my mind. I have friends who adore beets. I mentally added them to my "maybe" list – and suddenly they were everywhere

First dateCentral Market in Petaluma - an appetizer of beets slathered with butter (and maybe some cheese). Oh, hellooo beets! It's a shame we haven't met before! 

Second meeting – beets in my morning juice. Paired with apples & carrots. Tasty, and totally good for you. Think folate, potassium, manganese, and vitamin c.

Let's go steady – I made roasted beets with dinner a few nights ago. Austin was a bit skeptical when he took his first bite. The verdict? He adored.

    Already a fan, but I have no clue how to prepare them! I always order them when we’re out and they’re an option. And the pickled variety we eat all summer 🙂 Glad you found a good one! As for Brussels sprouts – ick. Though my husband saw a cooking show today where she removed all of the leaves and then fried them up with bacon. Hmm. Everything is better with bacon 🙂 But I’m thinking it defeats the purpose, nothing healthy about it!

    Oh, be still my heart! How I have waited for this day to arrive! LOL I can still see your sweet little face making a horrible grimace because I LOVED beets, still do. No, we didn’t make you eat them. Yes, it was the “cranberry association” that prevented you from even trying them.

    Beets are my husband’s favorite vegetable, and my daughter loves them too. I often just roast and serve plain, or with some butter and salt … or tossed into a salad. Also a delicious beet risotto that I also use the greens in … xox

    ‘kay….I’m sorry to say no matter how they’re fixed, beets make me gag. But…go figure…I love Brussel sprouts ( or however you spell them ). And roasting veggies in the oven does make them taste better. I don’t usually care for carrots, but a little olive oil and a toss in 425, and they taste mighty fine. Parsnips? yuck….until you give them the same treatment.
